Fresko Gelato & Waffle House, Highett

Gentrification of Highett is afoot, as new cafés and restaurants add to the village atmosphere along Highett Road. And now Highett is also the home of one of our favourite gelaterie – Fresko Gelato & Waffle House.

Previously known as Pagoto, the gelateria has a new name – “fresko” is Greek for fresh – and sparkling new premises. Gerry and Netka have relocated from Oakleigh, bringing their artisan gelato and Greek-inspired creations to the lucky residents of Highett.

It’s a happy welcoming space – an absolute pleasure to visit. Fresko’s signature pop-art style is enhanced by the airy light-filled interior. Perfect for chatting with our friendly hosts while perching on the socially distanced stools along the window-side bench.

There is something to appeal to everyone. Around two dozen flavours are on the menu, covering the gelato classics, vegan sorbetti and those wonderful flavours based on Greek desserts. No pre-mixes at Fresko – Gerry crafts his own gelato base from scratch, using premium ingredients to create his flavours.  Everything is made on-site and the menu changes daily.

The gelato is available in cups or cones, in gelato shakes or with freshly made waffles.

Fresko’s Greek flavours are already popular with Highett locals. From galaktobouriko (rich custard) and the super sweet loukoumi (rosewater) to mastiha (mastic) and watermelon & feta.

I picked another Greek specialty – chocolate baklava. Studded with chunks of dark chocolate and baklava pieces. And for extra chocolate, I paired it with Raffaello – white chocolate, coconut and hazelnut pieces. A great combination of two great gelati.

Benny chose a beautiful cassata gelato. With a generous amount of candied fruit – imported from Sicily – this was our star flavour of the day. The aroma of the fruit is just awesome. He paired his cassata with the vegan Black Hawaiian – carbon coconut water and chocolate.

Everything we sampled was gorgeous, great flavours and beautiful smooth textures. Fresko ticks all our boxes for well-made gelato.
